Enchilada Sauce #2
INGREDIENTS
  • Cooking Time: 20 minutes
  • Servings: 6 servings
  • Preparation Time: 5 minutes
  • 3 tablespoon oil
  • 1 tablespoon Chili Powder (more if you want)
  • 1 teaspoon Ancho chili powder
  • 1 teaspoon dry oregano
  • 1 teaspoon cumin
  • 1 teaspoon sugar
  • 1/2 teaspoon onion salt
  • 1 teaspoon minced garlic
  • 3 tablespoon wondra flour
  • 6 ounce can of tomato paste
  • 2 cups of chicken stock
DIRECTIONS
  1. In your sauce pan add oil over meduim heat to make a roux
  2. add flour
  3. stir 2 minutes until hot
  4. turn heat to low
  5. add chili powders, oregano, cumin, onion powder, sugar
  6. whisk until bubble,
  7. add chicken broth
  8. boil for 3-5 minutes it will thicken up.
  9. Store or serve

This has great flavor for add to the stuffed sweet potatoes or on enchiladas. Stores for a week or so in the refrigerator
