English Lemon Shortbread Squares
INGREDIENTS
- Servings: 2 - 1/2 dozen
- Shortbread:
- 1 c. LOL butter, softened
- 1/2 c. sugar
- 2 Tb. lemon juice
- 2 tsp. finely grated lemon zest
- 2 1/4 c. flour
- Glaze:
- 1/2 c. powedered sugar
- 1 Tb. LOL butter, softened
- 1 Tb. lemon juice
- 1 Tb. finely grated lemon zest
DIRECTIONS
- Heat oven to 350ยบ. Combine all shortbread ing. EXCEPT flour in lrg. bowl. Beat @ med. speed, scraping bowl often, 'til creamy. Reduce speed to low; add flour. Beat 'til mixture resembles coarse crumbs.
- Press dough evenly into lightly greased 8" square baking pan. Bake for 35-40 min. or 'til golden brown. Cool completely.
- Combine all glaze ing. EXCEPT lemon peel in sm, bowl with wire whisk 'til smooth.
- Spread thin layer of glaze over cooled shortbread; sprinkle with 1 Tb. lemon peel. Let stand 30 min. to set. Cut into strips.
