French Onion Soup

  • 3 onions, sliced thin
  • 1/4 cup butter
  • 4 3” x 3” slices Swiss Cheese
  • 3 1/2 cup beef stock
  • 6-8 slices toasted French bread
  • 1 bay leaf
  • grated parmesan cheese
  • salt, cayenne, &black pepper
DIRECTIONS
  1. Heat butter, sauté’ onions until
  2. deep brown ,about 25 minutes.
  3. Heat stock to a light boil. Add
  4. onions, bay leaf & simmer 20
  5. minutes. Season to taste.
  6. Top toast with parmesan cheese.
  7. Lay Swiss cheese at bottom of
  8. bowl. Add soup, top with toast
  9. Boil until Parmesan cheese is
  10. lightly browned.
