Fresh Apple Cake

INGREDIENTS
  • 2 cups sugar
  • 1 1/2 cups vegetable oil
  • 4 eggs
  • 1 tsp. pure vanilla
  • 2 1/2 cups all-purpose flour
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 3 cups peeled & chopped apples
  • 1 cup chopped Pecans
  • Caramel Glaze
DIRECTIONS
  1. Preheat oven to 350*F. Grease & flour a 12 cup tube pan.
  2. In large bowl, beat sugar & oil at medium speed with an electric mixer until combined. Add egss, one at a time, beating well after each addition. Beat in vanilla
  3. In medium bowl, combine flour, baking powder, cinnamon & salt; sift. Gradually add to sugar mixture, beating until combined. Stir in apples & pecans
  4. Pour into prepared pan; bake for 1 hour & 10 minutes or until wooden pick inserted in center comes out clean. Let cool in pan for 10 minutes. Remove from pan & cool completely on wire rack. Spoon warm Caramel Glaze over cake
