Fresh Pico De Gallo

  • 3 large green bell peppers
  • 2 large red bell peppers
  • 2 large yellow bell peppers
  • 1 purple onion
  • 4 cloves fresh garlic
  • 2 jalapeno peppers
  • juice from 1 lemon
  • juice from 1 lime
  • 1 bunch fresh cilantro
  • 1/2 pound fresh mushrooms
  • 6 roma tomatoes
DIRECTIONS
  1. Roast all peppers on the grill,just enough to get them nice and juicy.Chop all the peppers,garlic,mushrooms,and onion into a large mixing bowl.A food processor can be used,but dont get carried away.just chop enough to have coarse chunks.Chop celantro with a knife,and add to peppers in bowl. Chop tomatoes coarsly,Squeeze lemon,and lime juice over contents of bowl and refrigerate for several hours.Salt and pepper may be added as needed.Stir and enjoy on tortilla chips,as a topping for burgers,grilled steak,or chicken breast.Makes about 4 cups.
