Fresh Pumpkin Bread

  • 3 ½ c. sifted flour
  • 3 c. sugar
  • 2 t. baking soda
  • 1 t. cinnamon
  • 1 t. nutmeg
  • 1 ½ t. salt
  • 4 eggs, well beaten
  • 1 c. oil
  • ⅔ c. water
  • 2 c. mashed cooked pumpkin (fresh), but you may substitute 1 can packed pumpkin.
  • Walnut halves
DIRECTIONS
  1. 1. Preheat oven to 350 degrees. Sift together flour, sugar, soda, cinnamon, nutmeg and salt.
  2. 2. Combine eggs, oil, water, and pumpkin and mix well. Stir into dry ingredients.
  3. 3. Turn into 2 greased 8”x4” loaf pans and top with a few walnut halves. Bake 1 hour, or until a toothpick comes out clean. Cool before slicing. Makes 2 loaves.
RECIPE BACKSTORY
This is my favorite pumpkin bread. You can use canned pumpkin, but it tastes amazing with fresh, cooked pumpkin.
