Frosted Cookie-filled Brownies

- 1/2 cup cake flour, sifted
- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 2 eggs
- 3/4 cup granulated sugar
- 6 tablespoons unsweetened applesauce
- 2 tablespoons vegetable oil
- 1 1/2 teaspoons vanilla extract
- 1 cup broken chocolate sandwich cookies
- frosting
- 3/4 cup sugar
- 1/4 cup milk
- 2 tablespoons butter
- 1 cup miniature marshmallows
- 1 6-oz.pkg. semi-sweet chocolate chips
- 1 teaspoon vanilla extract
- 1/4 cup chopped chocolate sandwich cookies
DIRECTIONS
- Preheat oven to 350 degrees F. Spray an 8-inch square baking pan with non-stick cooking spray; set aside. In a medium bowl, combine flour, cocoa, and salt. Mix well. In large bowl, whisk together eggs, sugar, applesauce, oil, and vanilla. Stir in flour mixture until just blended; do not over mix. Pour 1/2 of the batter into prepared pan; sprinkle with broken cookies. Top with remaining batter. Bake for 25 minutes, or until just set, and a toothpick inserted in center comes out clean. Place pan on a wire rack; cool for at least 15 minutes.For frosting, combine sugar, milk and butter in a medium saucepan. Cook and stir over medium heat until sugar is dissolved. Add marshmallows, chocolate chips and vanilla. Cook and stir over medium heat until marshmallows and chocolate chips are melted. Cool frosting mixture until it reaches spreading consistancy. Spread over cooled brownies. Sprinkle with chopped cookies. Cut brownies into bars.
