GREEN CHILE CORN MUFFINS
INGREDIENTS

  • 1-1/4 C. Cornmeal
  • 2 t. Baking powder
  • 1 c. Cheddar, shredded
  • 8 oz. Corn
  • 1 c. Sour Cream
  • 4 oz. Chilies chopped
  • 1/2 c. Canola oil
  • 2-3 Eggs, lightly beaten
DIRECTIONS
  1. Combine cornmeal and baking powder.
  2. Add cheese, corn, sour cream & chilies.
  3. Stir till combined.
  4. Add oil and eggs and stir till just
  5. combined. DO NOT OVERMIX. Batter will be very stiff.
  6. Place batter into greased muffin cups.
  7. Bake at 400° for 18-20 min.
  8. Serve warm.
