Garbanzo-Avo Bean Sandwich
INGREDIENTS

  • 1 can of garbanzo beans
  • 1-2 avocado
  • Mayonnaise (optional)
  • half an onion
  • clove of garlic (optional)
  • half a cucumber
  • teaspoon of olive oil
  • sliced bread of choice (6 slices)
  • 1 lime
  • 1 tomato
  • salt
  • pepper
DIRECTIONS
  1. rinse beans in a strainer
  2. pit avocados and mash with a fork in a small bowl
  3. chop all vegetables and set aside
  4. put teaspoon of olive oil and chopped garlic, and garbanzo beans into a pan
  5. stir mixture for about 2-3 minutes on medium heat
  6. remove mixture and put into a bowl
  7. mash bean mixture
  8. add mashed avocado and chopped vegetables together in a bowl with seasonings
  9. mix until mixture is thick and spreadable
  10. spread mixture onto bread of choice and enjoy
