Ginger, Wasabi & Garlic Sauce

- 2 oz soy sauce
- 2 oz dry sherry
- 1 tbs toasted sesame oil
- A one inch chunk of fresh ginger
- 1 tsp of wasabi paste
- 1 clove of garlic
DIRECTIONS
- Put the soy sauce, sherry and sesame oil in a bowl
- Stir the wasabi paste into the soy sauce, sherry and sesame oil
- Taste the mixture and add more wasabi if desired
- Carefully trim the peel off the ginger
- Finely mince the ginger and add it to the bowl
- Peel the skin off the garlic and smash the clove
- Finely mince the garlic and add to the rest. Mix well
- Place in an airtight container and refrigerate over night
- Use as a dipping sauce or marinade
- Alternatively, you could just whizz all the ingredients together
