Ginger cupcakes

  • 1 C White flour
  • 1 C Whole Wheat flour
  • 1 T baking powder
  • 4 tsp ground ginger
  • 1 tsp cinnamon
  • 1 C packed brown sugar
  • 2 egg beaters
  • 1/2 C honey
  • 1/2 C butter - melted
  • 3/4 C milk
  • ground ginger to taste
DIRECTIONS
  1. Preheat oven to 350. Line 12 terra cotta pots with parchment paper. Sift flours, baking powder, ginger, and cinnamon into a bowl. In a separate bowl combine all remaining ingredients and beat until smooth. Add dry ingredients and spoon batter into the pots
  2. Bake 20 minutes, remove pots from oven and cool 10 minutes. Frost with a creme cheese frosting.
RECIPE BACKSTORY
The original recipe came from the 500 Cupcakes cookbook although I altered it a bit. I made these cupcakes for my sister's Hawaiian themed wedding in August and got rave reviews.
