Ginger cupcakes

- 1 C White flour
- 1 C Whole Wheat flour
- 1 T baking powder
- 4 tsp ground ginger
- 1 tsp cinnamon
- 1 C packed brown sugar
- 2 egg beaters
- 1/2 C honey
- 1/2 C butter - melted
- 3/4 C milk
- ground ginger to taste
DIRECTIONS
- Preheat oven to 350. Line 12 terra cotta pots with parchment paper. Sift flours, baking powder, ginger, and cinnamon into a bowl. In a separate bowl combine all remaining ingredients and beat until smooth. Add dry ingredients and spoon batter into the pots
- Bake 20 minutes, remove pots from oven and cool 10 minutes. Frost with a creme cheese frosting.
