Gingerbread Muffins with Lemon Glaze

- For Gingerbread
- 1 Full box Dassant Ginger Gingerbread Mix
- 1 large egg
- 1/3 cup vegetable oil
- 3/4 cup water
- For Lemon Glaze
- 1 3/4 cups powdered sugar
- 5 tablespoons lemon juice
- 1 tablespoon lemon zest
DIRECTIONS
- For Gingerbread
- Preheat oven to 400° F.
- Lightly grease standard muffin tins with butter or cooking spray.
- Whisk together egg, oil and water. Add mix.
- Blend until smooth, approximately 30 to 45 seconds.
- Pour batter into muffin tin 2/3 full and bake for 14-16 minutes.
- For Lemon Glaze
- Whisk powdered sugar and lemon juice together until a smooth consistency. Drizzle glaze over warm muffins and sprinkle with lemon zest.
