Gingersnap Pumpkin Pudding

  • 1 3/4 cups milk
  • 1 package pudding mix - cheesecake or vanilla
  • 1/2 cup pumpkin puree
  • 1/2 teaspoon pumpkin pie spice
  • 10 gingersnap cookies
  • 1 cup whipped topping
DIRECTIONS
  1. Whisk together milk and pudding. Stir in pumpkin spice, let stand 2 minutes.
  2. Crush 7 cookies. Add whipped topping to pudding mix.
  3. Sprinkle with cookie crumbs and serve garnished with remaining cookies.
