Gluten Free Apple Cinnamon Cupcakes

- Blender (with an S blade)
- 1 cupcake tin
- cupcake liners
- Oven pre-heated to 350
- Ingredients:
- 20 oz white kidney beans (well-drained)
- 1/2 tsp baking powder
- 1/2 cup honey
- 2/3 cup unsweetened organic applesauce
- 2 organic eggs
- 2 tsp ground cinnamon
- 1/16 tsp ground cardamom
- 1 tsp vanilla extract
- Topping:
- 1 tsp ground cinnamon
- 3 tablespoons organic butter (at room temp)
- 1/4 cup brown rice flour
DIRECTIONS
- Step One:
- Combine all ingredients in blender. Mix until smooth.
- Step Two:
- Fill cupcake liners almost to the top
- Step Three:
- Combine topping ingredients until it looks like lumpy wet sand.
- Step Four:
- Generously top each cupcake with topping mixture
- Step Five:
- Bake in oven for 35-40 minutes or until a toothpick comes out clean
