Gluten Free Apple Cinnamon Cupcakes
INGREDIENTS

  • Equipment Needed:
  • Blender (with an S blade)
  • 1 cupcake tin
  • cupcake liners
  • Oven pre-heated to 350
  • Ingredients:
  • 20 oz white kidney beans (well-drained)
  • 1/2 tsp baking powder
  • 1/2 cup honey
  • 2/3 cup unsweetened organic applesauce
  • 2 organic eggs
  • 2 tsp ground cinnamon
  • 1/16 tsp ground cardamom
  • 1 tsp vanilla extract
  • Topping:
  • 1 tsp ground cinnamon
  • 3 tablespoons organic butter (at room temp)
  • 1/4 cup brown rice flour
DIRECTIONS
  1. Step One:
  2. Combine all ingredients in blender. Mix until smooth.
  3. Step Two:
  4. Fill cupcake liners almost to the top
  5. Step Three:
  6. Combine topping ingredients until it looks like lumpy wet sand.
  7. Step Four:
  8. Generously top each cupcake with topping mixture
  9. Step Five:
  10. Bake in oven for 35-40 minutes or until a toothpick comes out clean
