Gluten Free Mediterranean Pasta Bake

  • Servings: 4 generous portions
  • Preparation Time: 15 minutes
  • 227g gluten free pasta
  • 3 sweet peppers, chopped
  • 2 courgettes, sliced
  • 2 red onions, cut into wedges
  • Medium aubergine, chopped
  • Low fat cooking spray
  • 2 x 400 g tins chopped tomatoes
  • Mixed herbs
  • 1/2 tsp dried chilli's
  • 227 g leaf spinach
  • 300 g low fat yoghurt
  • 28 g grated Parmesan cheese
  1. Preheat oven to 200/400/gas mark 6
  2. Cook pasta as per directions on packet, drain and set aside
  3. Place vegetables in a large deep baking tray, spray with low fat spray and bake for 20 minutes.
  4. Transfer vegetables to large oven proof dish, add tomatoes, herbs and spices. Pile spinach on top. Combine pasta with yogurt and pile on top of spinach and sprinkle with Parmesan. Bake for 20 minutes
