Gluten Free Tropical fruit with chilli and cucumber

  • Preparation Time: 15 minutes and 30 minutes marinating
  • 1 red onion, halved, thinly sliced and separated into half-rings
  • 1 mango, ripe but firm
  • 2 kiwi fruit, peeled and sliced/chopped
  • 1/4 cucumber, sliced
  • 1 fresh red chilli - seeded and finely chopped
  • 2 tablespoons sunflower oil
  • 2 tablespoons lime juice
  • 1 tsp clear honey
  • 2 tablespoon chopped fresh coriander
  • salt and pepper
  1. Combine chilli, sunflower oil, lime juice, honey, coriander. Add salt and pepper to taste.
  2. Pour over onion and put in fridge for 30 minutes
  3. Skin and chop the mango into small pieces. Combine with kiwi and cucumber
  4. Combine both sets of ingrediants together.
This is a favourite with my friends at church and just happens to be gluten free. It sounds wrong, however is delicious This is adapted from a recipe from Fresh Fruit and Desserts, Readers Digest's East well Live Well range. Not sure it is in print anymore however I am sure you can get this book second hand
