Goji Energy Balls - Raw Vegan
INGREDIENTS

  • 1/2 cup almonds (soaked)
  • 1/2 cup cashews
  • 1/2 cup coconut
  • 1/2 cup goji berries
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup pitted dates
  • 2 Tbsp lemon juice
  • pinch of salt
  • shredded dried coconut for coating
DIRECTIONS
  1. Process all ingredients except for dates and lemon juice in your food processor until crumbly.
  2. Add the dates and lemon juice and continue to process until mixture starts to ball up.
  3. Scoop and hand roll into balls.
  4. Roll in shredded coconut to coat.
  5. Store in the fridge or freezer.
