Grande Mere Tart

  • Dough:
  • 200 g flour
  • 100 g butter
  • 4 g Salt
  • 20 g sugar
  • 1 Tbl. water
  • 1 egg
  • Filling:
  • 2 apples, peeled, cored and cubed
  • 2 canned pears, cubed
  • 50 g. walnuts, chopped
  • 50 g pistachios, whole
  • 60 g butter
  • 60 g sugar
  • 100 g cream
  • sliced almonds for garnish
DIRECTIONS
  1. Preheat oven to 350
  2. Directions for crust:
  3. Cream flour and butter.
  4. add sugar and salt
  5. add egg and water
  6. Partially blind bake.
  7. Filling:
  8. Caramelize butter and sugar, and add apples and cook out till easily pierced by fork, but not soft. Add pears.
  9. Add cream, reduce a bit
  10. Add nuts to warm through.
  11. Pour into prepared tart shell and bake at 350 for 35 minutes or until bubbling.
  12. Let cool, garnish with sliced almonds
