Grandma's Buttermilk Cornbread

  • 1/2 cup butter
  • 2/3 cup sugar
  • 2 eggs
  • 1 cup buttermilk
  • 1/2 tsp baking soda
  • 1 cup cornmeal
  • 1 cup flour
  • 1/2 tsp salt
DIRECTIONS
  1. Preheat oven to 375 degrees F.
  2. Grease an 8 inch square pan.
  3. Melt butter in a large skillet over low heat.
  4. Remove from heat and stir in sugar.
  5. Add eggs and beat until well blended.
  6. Combine buttermilk with baking soda and stir into mixture in pan.
  7. Stir in cornmeal, flour, and salt until well blended and few lumps remain.
  8. Pour batter into prepared pan.
  9. Bake for 30 to 40 minutes until a toothpick inserted in the center comes out clean.
  10. Note: You could make this in a cast iron skillet. Greased 9 in. skillet with vegetable oil and put it in the oven while assembling the recipe. Pour batter into the hot skillet. Bake for 25 minutes.
