Green Chili Meat Rolls
  • 1 pkg cream cheese or other soft cheese
  • 2 or 3 medium green olives with pimento, pitted and chopped
  • 1 medium roasted green chili, diced
  • 2 fresh cherry tomatoes, diced (I use the yellow cherry tomatoes from my garden)
  • 1lb lunch meat, I use ham or turkey (they roll easiest without falling apart)
  1. Soften the cream cheese so that it's easy to mix things in then add the olives, green chili, and tomatoes.
  2. Put a spoonfull of the cream cheese mix on a slice of meat and roll up.
  3. The cream cheese filling could have just about anything, raisins, roasted garlic, sundried tomato spread, nuts, etc.
  4. The recipe above is pretty low carb and I think tastes great.
