Green Tomato Pie

  • 3 cups diced green tomatoes
  • 3/4 cup brown sugar
  • 3 Tablespoons flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 1/4 teaspoon salt
  • 1 Tablespoon vinegar
  • 1 Tablespoon vanilla
  • 1 Tablespoon butter
DIRECTIONS
  1. Peel and dice tomatoes, drain.
  2. Combine sugar, flour, spices and salt.
  3. Add tomatoes, vanilla and vinegar.
  4. Bring to a boil, then cool.
  5. Place butter in bottom of 9-inch pastry shell.
  6. Pour in cooled mixture.
  7. Cover with top crust.
  8. Bake 10 minutes at 425 degrees.
  9. Reduce heat to 375 degrees and bake for 20 minutes.
