Green and Red Peppers with Crab Meat
INGREDIENTS

  • 3 green peppers
  • 3 red peppers
  • 1 cup light cream
  • 4 tsp butter
  • ¼ tsp ground nutmeg
  • 2 tbsp cornstarch
  • ¼ cup dry white wine
  • 1 tsp lemon juice
  • 1 tsp salt
  • 2 cups crab meat, cooked
  • 1 cup rice, cooked
  • Paprika (optional)
  • 1 tsp salt
  • White pepper to taste
DIRECTIONS
  1. Preheat oven to 350° F.
  2. Cut tops off peppers, remove seeds.
  3. Steam peppers 2–4 minutes, drain.
  4. Heat cream and butter.
  5. Add nutmeg.
  6. Mix cornstarch, wine, lemon juice and salt.
  7. Add to cream.
  8. Cook until thickened, stirring constantly.
  9. Combine with crab meat and rice.
  10. Spoon into peppers.
  11. Sprinkle with paprika and salt.
  12. Bake in a greased baking dish in a moderate oven (350° F) for 20 minutes.
