Grilled Herb Grit Cakes
  • 2 1/4 c. water
  • 1 tbsp. butter
  • 1/2 tsp. salt (kosher)
  • 2 garlic cloves, minced
  • 3/4 c. uncooked coarse ground yellow grits
  • 1 tsp. chopped fresh basil
  • 1 tsp. chopped fresh thyme
  • 1 tsp. chopped fresh parsley
  • 8 tsp. parmesan cheese
  1. 1)Coimbine water, butter, salt, and garlic in a medium saucepan and bring to a boil. Gradually add grits, stirring constantly.
  2. 2)Reduce heat, and simmer for 10 minutes or until thick-stir occasionally.
  3. 3)Stir in basil, thyme, and parsley.
  4. 4)Pour grits into an 8 inch square baking dish.
  5. 5)Press plastic warp onto surface of grits and chill 2 hours (they should be firm)
  6. 6)Prepare grill.
  7. 7)Cut grits into 8 portions.
  8. 8)Grill grit cakes for 6 minutes. Carefully turn each cake over and sprinkle each cake with cheese. Grill 6 minutes or until lightly browned and heated through.
*Prepare grits a day ahead of time and refrigerate.*
