Grilled Lemon Butter Chicken
INGREDIENTS
  • Servings: 4
  • 1/2 cup lemon juice
  • 1/4 cup garlic olive oil
  • 3 tbsp chopped onion
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp thyme
  • 1 tsp minced garlic
  • 3 to 4 pounds chicken pieces
DIRECTIONS
  1. In a large ziplock baggie, combine lemon juice, oil, onion, salt, pepper, thyme and garlic; mix well. Remove 1/4 of mixture for basting and store in refrigerator. Add chicken pieces to the bag; seal and turn to coat. Refrigerate overnight.
  2. When ready to grill, drain and discard marinade from chicken. Grill over medium heat, covered, for 20 minutes.
  3. Baste with reserved marinade heated with 2 tbsp butter added. Continue grilling until juices run clear, about 20 to 30 minutes, basting and turning several times. Makes 4 servings.
