Ham and Bean Soup

  • 1 tablespoon olive oil
  • 1 small onion
  • 2 garlic cloves
  • 1 1/2 cups of ham cut into bite size pieces
  • 2 teaspoons of thyme
  • 2 15 ounce cans of white beans, drained and rinsed
  • 4 cup low sodium chicken brothe
  • 1 bay leaf
  • 4 cups of collard green cut into thin strips or 1 can cooked collard greens
  • salt and pepper to taste
DIRECTIONS
  1. Cook onion, garlic, ham and thyme in oil in large pot on medium heat until onion is osftened. approx. 5 minutes
  2. Add beans, broth, bay leaf, collards, salt and pepper and simmer, uncovered for 20 minutes. stirr occationally.
  3. Remove bay leaf and serve.
