Herbed Pecan Rub

  • 1/2 cup broken pecans
  • 1/2 cup fresh oregano leaves
  • 1/2 cup fresh thyme leaves
  • 3 cloves garlic, cut up
  • 1/2 teaspoon finely shredded lemon peel
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt
  • 1/4 cup cooking oil
  1. Combine pecans, oregano, thyme, garlic, lemon peel, pepper, and salt in a blender container or food processor bowl. Cover and blend or process with on-off turns until a coarse puree forms scraping the sides as needed. With the blender running gradually add oil until mixture forms a paste. Makes 1/2 cup, enough for 3 pounds of fish or chicken
