IRISH CREAM CHEESECAKE

INGREDIENTS
- 1 cup chocolate wafer crumbs
- 1/4 cup melted butter
- 2 pkg. (250 gr) cream cheese
- 3/4 cup sugar
- 1/4 cup flour
- 4 eggs
- 3/4 cup Bailey’s Irish Cream
- 1 tbsp. vanilla
- 1/2 cup whipping cream
- 1 tbsp. Bailey’s Irish Cream
- Shaved chocolate
DIRECTIONS
- Combine crumbs and butter, press onto bottom of a 9” greased springform pan.
- Beat cream cheese until fluffy, gradually beat in sugar and flour. Add eggs, one at a time, beating well after each addition. Stir in 3/4 cup Irish Cream and vanilla. Pour into prepared pan.
- Bake at 350 degrees for 10 minutes; reduce heat to 200 and bake an additional 50 minutes or until set. Cool; chill at least 2 hours.
- Just before serving combine whipping cream and 1 tbsp. Irish Cream, whip until stiff. Garnish with whipped cream and shaved chocolate.
