Impossible Italian Chicken Pie

- 3/4 cup cottage cheese
- 1/3 cup grated Parmesan cheese
- 1-1/4 cups cooked cubed chicken
- 1 (4 oz.) can sliced mushrooms, well drained
- 1-1/4 cups shredded mozzarella cheese
- 1 tsp. dried Italian herbs
- 1 (6 oz.) can Italian flavored tomato paste
- 1 cup milk
- 2 eggs
- 2/3 cup baking mix
- 1/4 tsp. pepper
DIRECTIONS
- Preheat oven to 400 degrees. Grease a 10" pie pan, and layer cottage cheese and Parmesan cheese in bottom of pan. In small bowl, combine chicken, drained mushrooms, 1/2 cup mozzarella cheese, Italian seasoning, and tomato paste. Spoon this mixture over Parmesan cheese.
- In medium bowl, combine milk, eggs, baking mix and pepper and beat with wire whisk until smooth. Pour over chicken mixture. Bake at 400 degrees for 25-30 minutes until golden brown. Sprinkle with remaining mozzarella cheese and bake 5 minutes longer until knife inserted in center of pie comes out clean. Cool 5 minutes before slicing. Serves 6-8
