Ingemaus's Fish Bobotie

- 1 x 450g tin of mackerell in tomato sauce
- 1 x medium onion - chopped
- 2 x tsps of your favourite curry powder
- Oil for frying onion
- +- 1 litre milk
- 2 x eggs
- salt to taste
- paprika
DIRECTIONS
- 1. Remove spinal bones from fish and mash
- 2. Fry onion and curry powder together till onion is soft
- 3. Add onion and curry powder to fish and mix well
- 4. Place in an oven dish
- 5. Beat the eggs with the milk and add salt to taste
- 6. Pour over the fish mixture
- 7. Put a few bay leaves, standing upright into the mixture
- 8. Sprinkle paprika over the egg custard
- 7. Bake in a medium oven till the egg custard has set
- 9. Serve on a bed of rice with a fresh salad
