Ingemaus's Fish Bobotie

  • 1 x 450g tin of mackerell in tomato sauce
  • 1 x medium onion - chopped
  • 2 x tsps of your favourite curry powder
  • Oil for frying onion
  • +- 1 litre milk
  • 2 x eggs
  • salt to taste
  • paprika
DIRECTIONS
  1. 1. Remove spinal bones from fish and mash
  2. 2. Fry onion and curry powder together till onion is soft
  3. 3. Add onion and curry powder to fish and mix well
  4. 4. Place in an oven dish
  5. 5. Beat the eggs with the milk and add salt to taste
  6. 6. Pour over the fish mixture
  7. 7. Put a few bay leaves, standing upright into the mixture
  8. 8. Sprinkle paprika over the egg custard
  9. 7. Bake in a medium oven till the egg custard has set
  10. 9. Serve on a bed of rice with a fresh salad
RECIPE BACKSTORY
I heard this recipe on a cooking show in South Africa many years ago, and it has become an absolute family favourite. It is economical and easy and an absolute winner.
