Italian Whole Wheat Rolls with Parmesan

- 2 table spoons olive oil
- 1 1/4 cup of tepid water
- 1 1/2 cup of whole wheat flour
- 1 1/2 cup of bread flour
- 1 teaspoon celery salt
- 2 tablespoon Italian seasoning
- 2 tablespoon flax meal
- 2-3 tablespoon grated parmesan
- 2 1/2 teaspoon bread machine yeast (or rapid rise yeast)
- 2-3 tablespoons all purpose flour for forming
DIRECTIONS
- Add ingredients to your bread machine, following the order recommended for your machine
- Set machine to dough setting
- * When dough is done, flour the clean counter top (or a baking board)
- * roll the dough on the flour, lightly coating it all over
- * roll it into a long thin roll
- * tear off small pieces of dough, shape them into small balls and place on baking sheet (lightly greased or use a silicon liner)
- * depending on the size of your balls you will get 12-15 rolls
- * with a sharp serrated knife make 2 or 3 cuts across the top of each roll
- * place on middle rack in cold oven, set to PREHEAT at 150 F for about 20 minutes
- * when timer rings, turn to BAKE and to 375 F (350 F if you prefer them less crusty), and set timer for 17 minutes
- * when timer rings, turn the oven off (do not open the door) and set the timer for another 5 minutes
- * take rolls out of oven and let cool on wire rack, they should sound hollow when tapped at the bottom, have a nice crust and be golden brown
- * let cool for a few minutes and then serve with butter
- These rolls go really well with a hearty stew.
