Jane Cake
  • Cooking Time: 20-25 minutes
  • 2 Cups Flour
  • 1-1/2 Cups Sugar
  • 1/2 Cup Shortening
  • 1 Cup Milk
  • 2 Eggs
  • 2 tsp Vanilla
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • For Glaze:
  • Powdered Sugar (to desired consistency)
  • 1 Tbs margarine or butter melted
  • 1 tsp Vanilla
  • 2 Tbs Milk
  1. Beat sugar and shortening until fluffy. Add eggs, vanilla and beat. In a separate bowl, add baking powder to flour and mix. Add flour mixture and milk alternately to sugar/shortening/egg mixture. Bake at 375 degrees F for 20-25 minutes in a jelly roll pan sprayed with a non-stick spray. While baking mix together margarine/butter, milk and vanilla in a bowl adding powdered sugar to desired glaze consistency (some like it thin, some thicker). After baking, while cake is still hot, poke with fork and pour glaze on cake.
This cake is a family recipe that originates from my Aunt Judy's best friend Jane Miller. For a long time we called it Jane's Cake but through the years it has been shortened to simply "Jane Cake".
