Jeannie's Favorite Banana Nut Cake

INGREDIENTS
  • 1 ½ C sugar
  • ½ C shortening
  • 2 eggs
  • 2 C flour
  • 4 Tbls buttermilk
  • 1 tsp baking soda
  • 3 large ripe bananas
  • ½ tsp salt
  • 1 tsp vanilla
  • 1 C nuts
  • Frosting:
  • ½ C butter
  • 1 small ripe banana
  • 1 tsp vanilla
  • 4 C powdered sugar
DIRECTIONS
  1. Preheat oven to 350F
  2. Cream together shortening & sugar.
  3. Beat in eggs, one at a time.
  4. Dissolve baking soda in buttermilk and add alternately with flour.
  5. Add bananas, vanilla & nuts
  6. Bake at 35F in 13x9x2 pan for for 25 – 30 minutes or until pick comes out dry.
  7. When completely cool, frost with frosting.
  8. For frosting, beat butter, banana, vanilla & powdered sugar until fluffy.
