Kick-Butt Chili

INGREDIENTS
  • 1 lb ground beef
  • 1 lb cubed beef
  • 3 onions - chopped finely
  • 6 cloves garlic - minced
  • 6 T chili powder
  • 1 jalapeno - seeded and minced
  • 3 roasted peppers - seeded and minced
  • 2 t ground coriander
  • 2 T ground cumin
  • 1 T paprika
  • 2 C beef stock
  • 12 oz dark beer (Guinness Black Lager)
  • 28 oz canned tomatoes with liquid
  • 15 oz black beans with liquid
  • 15 oz pinto beans with liquid
  • 1 T masa (corn flour)
DIRECTIONS
  1. Brown beef in cast iron skillet in batches, drain fat and set meat aside.
  2. Saute onions, jalapenos and peppers until translucent (5-8 minutes)
  3. Add garlic and saute for one additional minute
  4. Add beef back to pot with vegetables
  5. Add tomatoes with liquid
  6. Add beans with liquid
  7. Add beer and stock
  8. Add spices
  9. Bring to boil, reduce heat and cover
  10. Simmer for one hour
  11. Add masa and simmer for 10 additional minutes
