Killer Dark Chocolate Thins

INGREDIENTS
  • 2 cups flour
  • 3/4 cup Dutch process cocoa
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/4 cups unsalted butter @ room temp.
  • 2 cups sugar (*plus extra for dipping)
  • 2 eggs @ room temp.
  • 2 tsp. vanilla
DIRECTIONS
  1. Preheat oven to 350 degrees & line baking sheets with parchment.
  2. Cream butter & sugar until light; add vanilla. Whisk dry ingredients together, add to creamed mixture. Mix until just combined.
  3. Cover and chill for one hour until firm.
  4. Roll into 1" balls; roll in sugar.
  5. Bake on parchment-lined sheets 8-12 minutes or until firm.
  6. Cool on pan 5 minutes before moving to cooling rack.
