LENTIL - BARLEY STEW

INGREDIENTS
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 8 to 12 c. water
  • 1 c. barley (dry)
  • 1 1/2 c. lentils (dry)
  • 2 tsp. each of basil, thyme,
  • oregano, parsley, bay leaf
  • 3 large potatoes, unpeeled
  • 2 to 3 carrots, chopped
  • green peas or other fresh or
  • frozen vegetables, if
  • desired
  • 1 can chopped tomatoes with
  • liquid
  • 1 to 2 c. tomato juice
DIRECTIONS
  1. Simmer onion, garlic, barley and lentils in water for
  2. approximately 1 hour. When barley is soft, add potatoes and
  3. carrots. Add green vegetables last. Simmer until all vegeta-
  4. bles are done. Add tomato juice. May sprinkle with celery
  5. salt.
