Latin flavored Yucca cakes
  • 1 lb Yucca, peeled and cubed
  • 2 T olive oil
  • 1 med yellow onion, chopped
  • 1 clove garlic, minced
  • 2/3 c orange juice
  • 1/3 c lime juice
  • zest of 1 orange(optional)
  • 2 T cumin
  • 1 T cilantro, chopped
  • 1 T oregano, chopped
  • 1/4 c butter
  • salt and pepper to taste
  1. Blanch yucca in boiling water until tender. While yucca is cooking heat oil in saute' pan over medium heat. Add onion and garlic lower heat and sweat vegetables. Add juices and reduce by 1/4. When yucca are cooked, drain and add to the pan. add remaining ingredients and continue to cook on low heat until all liquids are absorbed. The finished product will look like chunky mashed potatoes. Season w/ satl and pepper. Spoon into ring molds. Unmold and keep refridgerated until cakes set. Sear cakes in oil until golden brown. Finish in the oven until hot in center.
