Lava Cake
INGREDIENTS

  • 1 tsp baking powder
  • 18 g magnum quattro protein powder
  • 37 g egg whites
  • 20 g gluten free pancake mix
  • 6 drops stevia
  • 40 g unsweetened coco powder
  • 40 g Walden Farms Syrup
  • 90 g black beans (rinsed)
  • 50 g xyla
DIRECTIONS
  1. measure all ingredients, except chocolate chips in vitamix or food prep. blend throughly. spoon into 6 silicone muffin moulds or a tin treated with non stick spray. Bake at 350 for 6-8 min. cool and top with sweet icing if desired. (see recipe for serrate icing)
  2. 1 muffin= 171 cal: 6.59 protein, 19.83 carbs, 8.67 fat.
  3. 1 muffin with 5 g icing = 182 cal: 7.89 protein, 19.92 c, 8.96 fat
