Leek and Potato Soup

INGREDIENTS
  • 5 cups water
  • 2 vegetable bouillon cubes
  • 3 carrots diced
  • 3 large potatoes peeled and chopped
  • 4 celery stalks diced
  • 2 large leeks sliced
  • 4 garlic cloves minced
  • 5 TBSP of olive oil
DIRECTIONS
  1. In pot boil water and add bouillons, carrots, potatoes, celery and simmer for 30 minutes.
  2. In pan saute leeks and garlic with oil then add to pot and cook 30 more minutes.
