Lemon Basil Butter
- Servings: 1/2 cup
- 6 tablespoons butter, softened
- 3 tablespoons, fresh basil, chopped
- salt and pepper, to taste
- 1 tablespoon lemon peel, chopped
- lemon juice, to taste
- Cream butter with remaining ingredients. Melt and brush on chicken before baking or broiling. Or, chill butter in a cylinder shape, slice into rounds and serve on top of cooked chicken breast or on a fresh grilled cob of corn.
