Lemon Blueberry Topping
INGREDIENTS
- 1 pint fresh or thawed frozen blueberries
- 1 lemon, zested and juiced
- 2 TBL. sugar
- 1 TBL. cornstarch, mixed in 1/8 cup cold water
DIRECTIONS
- In a small saucepan, add blueberries, sugar, and lemon juice and zest. Simmer over medium heat for 5 minutes or until fruit begins to break down slightly. Add cornstarch mixture and simmer until thickens. Cool, and use on top of cheesecake or ice cream
