Lemon Blueberry Topping
  • 1 pint fresh or thawed frozen blueberries
  • 1 lemon, zested and juiced
  • 2 TBL. sugar
  • 1 TBL. cornstarch, mixed in 1/8 cup cold water
  1. In a small saucepan, add blueberries, sugar, and lemon juice and zest. Simmer over medium heat for 5 minutes or until fruit begins to break down slightly. Add cornstarch mixture and simmer until thickens. Cool, and use on top of cheesecake or ice cream
