Lemon Frosted Cookies

INGREDIENTS
  • 1 1/4 c. all purpose flour
  • 1/2 c. cornstarch
  • 1/3 c/ powdered sugar
  • 3/4 c. butter, softened
  • 1 tsp. lemon zest
  • 1 tsp. lemon juice
  • Frosting:
  • 3/4 c. powdered sugar
  • 1/4 c. butter, softened
  • 1 tsp. lemon zest
  • 1 tsp. lemon juice
DIRECTIONS
  1. In large bowl combine all cookie ingredients. Beat at low speed, 2-3 min, until well combined. Divide dough in half, shape each half into 8x1 inch logs. Wrap in plastic wrap. Chill until firm about 1 hour. Heat oven to 350 degrees. With sharp knife, cut each log into 1/4 inch slices. Place 2 inches apart on cookie sheets. Bake for 8-12 min. or until set. Cookies will not brown. Cool completely. In another bowl mix all frosting ingredients. Beat, scraping sides, until fluffy. Frost cooled cookies.
