Lemon Glazed Cake
  • 1 lemon cake mix
  • 1 3.4-ounce package instant lemon pudding mix
  • 4 eggs
  • 1 cup water
  • 1/3 cup vegetable oil
  • 1 tbsp butter, melted
  • 1/4 cup lemon juice
  • 1 cup powdered sugar
  1. Preheat oven to 350 degrees; grease and flour a 10-inch fluted bundt pan.
  2. In a mixing bowl, combine dry cake mix, dry pudding mix, eggs, water and oil.
  3. Beat on medium speed for 2 minutes; pour into prepared pan.
  4. Bake until a toothpick inserted near the center comes out clean, about 35 to 40 minutes.
  5. Cool on a wire rack.
  6. Remove from pan after 1o minutes and continue to cool on wire rack.
  7. When cake is cool, make glaze by combining butter and lemon juice in a small bowl.
  8. Stir in powdered sugar until smooth.
  9. Put cake on platter; poke holes in cake with a large fork.
  10. Slowly drizzle with glaze.
