Lemon Snaps

INGREDIENTS
- 3/4 C butter
- 1 egg
- 1 T lemon juice
- 1 lemon cake mix (w/pudding)
- 1 C cornmeal
- 3 T lemon zest
- 10X sugar for rolling
DIRECTIONS
- Preheat oven to 375’
- Beat butter, egg and lemon juice on med , about 30 seconds.
- Slowly beat in cake mix, cornmeal and lemon zest
- Make into 1” balls - roll in sugar
- Bake 9-10 minutes
