Lemon Sponge Pie

INGREDIENTS
  • 1/4 cup melted butter
  • 1 cup sugar
  • 3 Tablespoons flour
  • 3 egg yolks, slightly beaten
  • juice and peel of two lemons
  • 1 1/2 cups milk
  • 3 egg whites, stiffly beaten
DIRECTIONS
  1. Blend butter with sugar and flour. Add yolks, lemon juice, lemon peel and milk. Fold in egg whites. Bake at 425 degrees for 8 minutes, then 325 degrees for 25 minutes.
