Lemon Streusel Muffins

- Full box Dassant Meyer Lemon Cake Mix
- 2 large eggs
- 1 cup milk
- 1/2 cup vegetable oil
- For Streusel
- 1/2 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/2 cup packed light brown sugar
- 4 tablespoons butter- softened and cut into 1/2-inch pieces
DIRECTIONS
- For Muffins
- Preheat oven to 400° F. Lightly grease a standard muffin tin with butter or cooking spray. Combine eggs, milk, and oil. Add mix. Blend together until batter is smooth, about 1 to 2 minutes. Pour batter 2/3 full in muffin tins. Sprinkle muffins tops with streusel and bake for 14 to 16 minutes.
- For Streusel
- In medium bowl, stir together the flour, cinnamon and brown sugar. Add the butter pieces and combine mixture with a fork until the topping resembles coarse crumbs.
