Lime Curd Chicken Parmesan
  • 2 large chicken breasts
  • 2 eggs
  • 1 cup parmesan flavored bread crumbs
  • 3 T olive oil
  • 1/2 cup lime curd
  • 1/2 cup honey
  • salt and pepper to taste.
  1. Heat olive oil on a medium high heat.
  2. Season chicken with salt and pepper to taste. Dip chicken breasts in the two beaten eggs and roll in bread crumbs.
  3. Brown chicken on all sides.
  4. Lower heat to medium, cook for 4 minutes on each side (adjust cooking time according to size of chicken breasts.)
  5. Mix honey and lime curd in a small sauce pan.
  6. Warm on a low heat. Brush the mixture on the chicken.
  7. Garnish with a slice of lime
"This recipe was born out necessity. I was setting out to prepare a Lemon chicken, but had no lemons or lemon curd. The lime curd was available, but a little tart. Mixing it with honey made a perfect sauce. The food critic (my husband), looked at this dish a little suspiciously. But ever the trooper, tried a bite. This a meal he requests at least once a month."
