Linguini with Shrimp and Feta
INGREDIENTS
  • 1 t olive oil
  • 1 lb med. Shrimp
  • 3 cloves garlic
  • 3/4 t oregano
  • 1/2 t salt
  • 1/4 t crushed red pepper
  • 1/2 c white wine
  • 3 c chopped tomatoes
  • 3/4 c feta cheese
DIRECTIONS
  1. 1) Heat 1t olive oil in lg skillet. Add 1lb med. Shrimp, 3 cloves garlic, ¾ t oregano, ½ t salt, ¼ t crushed red pepper. Saute for 3 min. and spoon into greased 7x11 baking dish
  2. 2) Pour ½ c white wine into skillet, and cook over low heat for 3 min. Stir in 3c chopped tomatoes. Pour over shrimp mixture and sprinkle with ¾ c feta cheese
  3. 3) Bake at 350 for 10 min. Serve over hot cooked linguini
