Loaded Goat Blueberry Cheesecake

  • Crumb Mixture:
  • 1 box yellow cake mix
  • 1/3 cup soft butter
  • Filling:
  • 3 large eggs
  • 3/4 cup sugar
  • 2 pkgs. (8 oz. each) cream cheese, softened
  • 2 teaspoons vanilla
  • Topping:
  • 2 cups sour cream
  • 1/4 cup sugar
  • 1 tablespoon vanilla
  • 1 can (21 oz.) blueberry pie filling
DIRECTIONS
  1. For crumb mixture, mix cake mix, butter and 1 egg until crumbly. Press lightly into a 9 x 13-inch baking pan.
  2. For filling, beat 2 eggs, 3/4 cup sugar, cream cheese and 2 teaspoons vanilla until smooth. Pour over crumb mixture. Bake at 350ºF for 25 minutes or until set.
  3. For topping, mix sour cream, 1/4 cup sugar, and 1 tablespoon vanilla. Spread over cheese. Cool. Spread blueberry pie filling on top. Refrigerate overnight.
