Loaded Goat Blueberry Cheesecake

- Crumb Mixture:
- 1 box yellow cake mix
- 1/3 cup soft butter
- Filling:
- 3 large eggs
- 3/4 cup sugar
- 2 pkgs. (8 oz. each) cream cheese, softened
- 2 teaspoons vanilla
- Topping:
- 2 cups sour cream
- 1/4 cup sugar
- 1 tablespoon vanilla
- 1 can (21 oz.) blueberry pie filling
DIRECTIONS
- For crumb mixture, mix cake mix, butter and 1 egg until crumbly. Press lightly into a 9 x 13-inch baking pan.
- For filling, beat 2 eggs, 3/4 cup sugar, cream cheese and 2 teaspoons vanilla until smooth. Pour over crumb mixture. Bake at 350ºF for 25 minutes or until set.
- For topping, mix sour cream, 1/4 cup sugar, and 1 tablespoon vanilla. Spread over cheese. Cool. Spread blueberry pie filling on top. Refrigerate overnight.
