Macaroni & Tomatoes

  • 2 cups macaroni
  • 1/2 Tbsp salt
  • 1 can (796 mL/28 oz) diced tomatoes
  • 1 Tbsp butter
  • 1 can (284 mL/10 oz) condensed tomato soup
  • Optional: 2 garlic cloves, minced
  • Optional: 1/4 cup onions, diced
  1. Bring 4 litres of water with salt to a boil in a large pot. Add macaroni, stirring occasionally until water returns to a boil.
  2. Cook at a low boil, uncovered, for half the recommended time on the macaroni package. Drain pasta.
  3. Stir the butter into the macaroni, add the diced tomatoes and tomato soup. Let it simmer until desired consistency.
  4. Optional: fry up the onions or garlic with the butter before adding the macaroni and tomatoes.
This is a comfort food that is particularly enjoyed on a cold and wet day. It is quick to make and usually satisfies the picky eater.
