Macaroni Salad
  • 1 lb. macaroni
  • 1 green pepper (chopped)
  • 1 small onion (chopped)
  • 2 c. grated carrots
  • 1 can Eagle Brand condensed milk
  • 2 c. mayonnaise
  • 1 c. vinegar
  • 1 c. sugar
  • 1/4 tsp. pepper
  • 1 tsp. salt
  1. Cook, drain and cool macaroni, according to package directions. Add onion, carrots and pepper to macaroni and set aside. (I use a blender to grate the peeled carrots.) Mix the rest of the ingredients together and add to macaroni and vegetables. Place in refrigerator for 2-3 hours.
